Simple, 3-ingredient cookies

I’ve been looking around for simple cookie recipes that I will feel good eating. This is one of my favorites so far.

Cinnamon Banana Oat Cookies

  • 2 ripe bananas, mashed
  • 1 cup old-fashioned oats
  • 1 teaspoon ground cinnamon

Preheat oven to 350 degrees Fahrenheit.

Mix everything together. Use a small ice cream scoop to portion 12 cookies on a parchment-lined cookie sheet. Use a fork to push them down a bit in the middle.

Bake at 350 degrees Fahrenheit for 15 minutes, then cool on a wire rack.

Yields 12 cookies for 1 SP each.

I made another half batch using 1 teaspoon of Nestle Toll House Cocoa Powder (0 SP, it has no added sugars) instead of cinnamon, and that batch was also very delicious.
